Johnny's Coconut-nut-nut Cookies |
TOOLS YOU'LL NEED:
- Food processor (or something to smash nuts with, like a brick)
- Dehydrator
INGREDIENTS YOU'LL NEED:
- Coconut shavings (dried and unsweetened), 1/2 Cup
- Pecans (crushed into bits), 4 Tbsp
- Walnuts, 3/4 Cup
- Agave Syrup, 5 Tbsp
- Coconut Oil, 1 Tbsp
- Cinnamon, 1 Tbsp (vary to taste, I love cinnamon)
- Almond Flour, 1 Tbsp
- Water, 3 Tbsp
STEP 1: Go Nuts!
- Smash your Pecans up and set them aside.
- Put the Coconut Shavings, Walnuts, Almond Flour, Cinnamon, 4 Tbsp Agave, and 3 Tbsp of Water in the food processor and blend.
- I recommend only putting the Water in 1 Tbsp at a time, and stop if it appears watery.

STEP 2: Dehydrator!
- Spoon the mixture onto a dehydrator sheet.
- Flatten out 12 balls into a rough cookie shape.
- Dehydrate for 4 hours (if you can't easily pick them up after 4 hours, add an hour).
- Flip cookies off of dehydrator sheet, and dehydrate for another 4 hours.

STEP 3: Get Saucy!
- Liquify 1 Tbsp of Coconut Oil.
- Add 1 Tbsp of Agave, and some Cinnamon.
- Drizzle over the top of each cookie.

STEP 4: Cool it buster!
- Let the cookies harden in the refrigerator for 30 mins.
- Enjoy!
