Johnny's Raw Vegan Mushroom Burger v2

Johnny's Raw Vegan Mushroom Burger

Tools You'll Need:
  • Food Processor
  • Dehydrator
  • Blender (I use a Magic Bullet)

Ingredients You'll Need:
  • Pepper (I used a Green one, you choose) - 1 Whole Pepper
  • Flax Meal (or get flax seeds and pulverize them) - 1/2 Cup
  • Mushroom - 1 Package (8oz)
  • Walnuts - 1/3 Cup
  • Onion - One Small Onion
  • Jalapeño - 1 Pepper (skip if you don't like spicy)
  • 1 Celery - 1 Whole Stalks
  • Olive Oil - 1 Tbsp
  • Spices of your choice (I used garlic, cayenne, pepper, and onion)

STEP 1: Prep Mushrooms
  1. Clean the mushrooms.
  2. Dehydrate for 2 hours.
  3. Chop in Food Processor.

STEP 2: Set Binding
  1. Toss Flax Meal and Green Pepper into blender. Blend.
  2. Let sit for about 10 minutes. It will thicken considerably. If too watery, add flax.

STEP 3: Make Filler
  1. Toss Walnuts, Onion, Jalapeño, Celery, Oil, and Spices into Food Processor.
  2. Add Mushrooms.
  3. Process until combined.

STEP 4: Form Burgers
  1. On your Dehydrator Sheet, form 5 burgers and flatten them out so that they are not too fat. I didn't do this in version 1, and the texture in the middle wasn't as good as the outside.
  2. Dehydrate for 3-4 hours.
  3. Flip Burgers.
  4. Dehydrate for 2 hours.

STEP 5: Eat!
  1. I served these on a leaf of Boston Lettuce with Cucumber, Yellow Pepper, Avocado, and Homemade Salsa. Trick them out any way you'd like.
  2. Enjoy!
