Raw Vegan Not-Fried Stir Fry - Mmm! |
I found a basic raw stir fry recipe on the web and Nicole and I tweaked it to make it tastier and 1000 times healthier. Here's our version ...
TOOLS YOU'LL NEED:
- Dehydrator (optional)
- Food Processor (or you could do all your chopping by hand - "choppin' broccoli!")
INGREDIENTS YOU'LL NEED:
- Broccoli - 1 cup
- Parsnip - 2
- Onion - 1 small
- Carrot - 1 large
- Mushrooms - 1 cup
- Sundried Tomatoes (soft) - 1/3 cup
- Hot peppers - 2 whole
- Agave Nectar - 2 Tbsp
- Soy Sauce - 2 Tbsp
- Curry powder - 2 Tbsp
- Red Pepper Flakes - 1 Tbsp
- Olive Oil - 1/2 Tbsp
STEP 1: Naked veggies
- Peel Parsnips.
- Skin Onion.
- Clean Mushrooms thoroughly.
- Chop Onion and Mushrooms in Food Processor.

STEP 2: Dehydration phase (optional)
- Dehydrate for 30mins to soften (I prefer the flavour this way, but it's optional)

STEP 3: Veggie smashing phase
- Chop Broccoli by hand.
- Chop Parsnips until as fine as rice in Food Processor.
- Chop all other veggies (carrot, tomatoes, peppers) in Food Processor.

STEP 4: Prepare the binding sauce
STEP 5: Combine everything!
- Combine everything and compress into a ball.
- It should be sticky enough to hold it's shape and be eaten by chopsticks.
- Enjoy!
Serving size: Makes 2 large portions

I think your recipe was so delicious. I will try to cook it because I'm sure my family will like this recipe. By the way, do you have a Stir Fried Chicken recipe? I will add that also in my dinner.
